Noche de Muertos

Tasting notes:
Mineral, earthy note with slight herbal touch, closing with an elegant note of verbena.

Palrings:
The beauty of espadín lies in its balance. Because it sits right in the middle of the favor spectrum, offering sweetness, acidity, and smoke, it is incredibly versatile with foods as red meat, chicken, duck, ceviche and grilled vegetables.

Monarch Butterflies

Tasting notes:
Wood, tangerine, herbal and citric flavours, lemon tea, pinch of mint.

Palrings:
Agave cupreata is less smoky than espadín. With its notes of wood, fruits and herbs, it pairs perfectly with succulent, fatty meats. Its floral notes complement cheeses and jamón ibérico or prosciutto.

Baile de los viejitos

Tasting notes:
Initial citrus note that evolves into a mineral profile, with herbal and earthy hints at the end.

Palrings:
To complement the evolving citrus profile of the Tiple Ensamble, pair it with dishes that balance richness and freshness, Duck with fruit reductions or grilled octopus with chimichurri reflect its complexity, while wild mushroom pasta or aged manchego enhance its earthy notes. For a perfect finish, a citrus tart or dark chocolate highlights its lingering freshness.
