Entropía 22 Triple Ensamble is a 375 ml artisanal mezcal crafted from the perfect blend of three agaves: Cupreata (9 years), SP (6 years), and Inaequidens (13 years), offering a perfectly balanced profile at 40 ABV. Produced using traditional methods—earth pit roasting, wooden fermentation, and double distillation—this mezcal reveals an initial citrus note that evolves into a mineral profile, with herbal and earthy hints at the end.
To complement the evolving citrus-to-mint profile of the Triple Ensamble, pair it with dishes that balance richness and botanical brightness. Duck with fruit reductions or grilled octopus with chimichurri mirror its complex transition, while wild mushroom pasta or aged Manchego ground the spirit’s earthy Inaequidens notes. For a perfect finish, a citrus tart or dark chocolate elevates the cool, minty lingering notes of this high-altitude blend.
Entropía 22 is inspired by the Danza de los Viejitos, a traditional dance rooted in pre-Hispanic culture from Michoacán. Originally a tribute to Huehuetéotl, a deity from pre-Hispanic mythology, it evolved into a vibrant expression of Purépecha heritage. Dancers, wearing carved masks, smiling faces, and colorful ribbons, weave age and vitality into rhythmic stomps, leaps, and stumbles—a celebration of life’s cyclical nature, accompanied by violins and guitarrones.
