What is Entropy?

Entropy is a cosmic law stating that all energy must eventually scatter, all matter must drift into disorder, and all light must fade into the vast, disorganised reaches of space. It is the natural shift toward chaos, where the concentrated and the tidy are slowly loosened by time.

Entropía 22 dares to defy this law within the craft of mezcal; we rewrite the story of chaos into one of rediscovery. Our purpose is to transform the imbalance into harmony, celebrating the Mexican traditions and feminine brilliance that bring life to every drop of artisanal mezcal.

Myrna Flores – The Founder

was born in Mexico and is based in Switzerland since 2002. By launching Entropía 22 she honours the soul of her homeland and champions mezcal as a testament to wisdom and cultural identity.

Driven by a commitment to social equity, Myrna focuses on bringing the heritage of maestras mezcaleras out of the shadows into the light. She is devoted to transform a once hidden female legacy into a vibrant, inclusive and flourishing future.

Luz María Saavedra – Maestra Mezcalera

is an agricultural engineer by profession. She has redefined the mezcal landscape in Michoacán and Mexico. As a leader of the National Association of Mezcal Women, she has dedicated her life to empowering maestras mezcaleras.

Her work transforms each spirit into a powerful act of cultural resilience, bridging traditional craftsmanship with global recognition and environmental sustainability.

Selection

Harvesting only fully mature agave plants from the field.

Trimming

Stripping the leaves to reveal the agave heart, or piña.

Baking

Slow roasting the hearts in earthen pits with hot stones and oak wood.

Crushing

Milling the cooked agave by hand or stone wheel to release sugars.

Fermentation

Resting the fibre and juice vats to transform sugars into alcohol.

Distillation

Heating liquid in post or stills to separate and refine the spirit.

Bottling

Final packaging into glass or clay vessels based on the mezcal type.

origin mezcal

Established in 1994, the Denomination of Origin is a legal safeguard that ensures «Mezcal» is produced exclusively within 12 authorised Mexican states, using traditional methods and regulated agave species. By upholding the rigorous standards of NOM-070, the Denomination of Origin guarantees that every bottle is a genuine product of its geography and heritage.

For Entropía 22, the Denomination of Origin is more than a regulation; it is a shield for cultural legacy. It protects the maestras mezcaleras from global counterfeits, ensuring that the economic value and «soul» of the spirit remain rooted in the artisanal communities of Mexico. It is the bridge between legal protection and the preservation of ancestral wisdom.

The production of mezcal in Michoacán is a deep-rooted artisanal tradition that distinguishes itself from other regions through its unique biodiversity and historical «Filipino» influence in distillation techniques.

The state was officially included in the Denomination of Origin in 2012, and its production is centred in «Tierra Caliente» and temperate mountain regions, particularly around municipalities like Etúcaro, know as the «Cradle of Mezcal» in Michoacán, Madero, and Tzitzio.
